Could you please tell me the cellaring recomendation for True North 2004 Merlot. Thank you.

My apologies for not seeing your query sooner. We try all our wines at least every six months. The last time we tried the True North Merlot 2004 (June) the bottle continued to drink well for up to 5 days without showing any notable sign of volatiles (acetic acid, i.e. vinegar characters). This suggests that it has some way to go – we think 2-3 years. Of course it has lost much of the primary fruit of youth and is now showing some interesting bottle aged flavours such as tamarillo, barbecued sausage and a slightly smokey character. I hope this helps.
